Michael "MJ" Jackson
Chef Michael “MJ” Jackson is passionate about food. “Every nuance of every product excites me,” he says. “From the littlest olive to the tastiest ribeye, I find joy in cooking.”
His passion shows in every event catered at the Hotel, from a small breakfast meeting to the most elaborate wedding or complex conference. He makes sure the meal details are perfect so the overall experience is magnificent.
After extensive hands on training, MJ began building a reputation as a chef who can get multi-million dollar Food & Beverage operations up and running.
He opened the Twelve Bridges Golf Club as Executive Sous Chef, furthering his career by opening a large Del Webb Corporate Golf Community nearby. As the opening Executive Sous Chef, MJ was responsible for all attributes of catering, restaurant and concessions from local events to large LPGA tournaments (where he learned his short game from the pros).
In 2003 he became one of the opening chefs of Thunder Valley Casino, assisting in the opening all of their restaurants and establishing their culinary standards. MJ then moved to the St. Louis market with Ameristar Casinos where he was the Production Chef for nine varied venues.
Moving back to his home state of California, he settled into Napa as the Executive Chef of Embassy Suites Napa Valley. Meeting his wife in Sacramento, he moved to the region and opened the Citizen Hotel and Grange Restaurant – a farm-to-table concept with an emphasis on quality and technique. However, he soon found his way back into Casino life as one of the Restaurant Chefs at Red Hawk Casino.
He now splits his time between our Hotel and Casino running culinary operations within both the Banquet Department and the Rancheria Buffet.
