For Chef Brett Thomas, Lone Wolf Restaurant & Lounge is the perfect place to showcase the best and freshest local and seasonal ingredients in a beautiful setting.
“I am excited to be able to provide a wonderful experience for our diners, from great West Coast oysters to artisan pizzas and signature dishes like our amazing Tomahawk steak for two,” he says. “The family style dishes provide an excellent opportunity to share many of the great menu items.”
His culinary career includes everything from wild game to exquisite desserts. He has served as Chef at Bella Union Dining Saloon in Jamestown and Baker for Bon Appetite in Sonora.
At the famed Columbia City Hotel in Columbia, he served as Sous Chef, Pastry Chef and Interim Chef, in charge of both menu design and recipe implementation and production as well as event planning and execution.
He continued his hotel experience as Executive Chef at Murphys Historic Hotel in Murphys before returning to the Sonora area as Chef de Cuisine for the elegant Seven Sisters restaurant at Black Oak Casino.
His training includes the extensive Culinary Arts Program at Columbia (which includes the Columbia City Hotel restaurant), and the Western Culinary Institute in Portland, Oregon.
He has brought all this Northern California experience to Lone Wolf, where his goal is to provide luxurious meals in a comfortable setting.
